For our autumn cooking workshops series, will be focusing on some of the most delicious Greek ingredients such as dakos rusks, fava (split yellow peas), filo pastry, wild herbs, tahini and petimezi (grape molasses). These are unique artisan produce that Marianna carefully picks and sources exclusively from small producers all over Greece and represent the uniqueness of the Greek terroir and culture. Oliveology only work with independent, artisan farmers who produce truly high quality items using traditional and sustainable techniques. In this way we can help preserve traditional methods and support independent local producers in Greece.
